- A pale pink-colored, dry, and fresh rosé with an aromatic bouquet of rose petals and raspberry complemented by mineral and fennel tones with just a hint of liquorice. This delicate and vibrant pale pink-coloured rose exhibits an enchanting and fresh bouquet redolent of juicy peach and ripe strawberry, interwoven with the fragrant essence of rose petals, subtle hints of spice, and underlying mineral nuances. This wine is characterized by its crisp acidity, balanced by a luscious, fruity palate, culminating in a lingering and satisfying finish.
The single-vineyard grapes were destemmed, optically sorted, and lightly crushed. A cold soak occurred at 8°C for two hours, followed by fermentation with selected yeasts at gradually increasing temperatures. The wine was maintained ‘sur lie’ or on its fine lees for three months with regular stirring to impart texture and complexity to the wine. It was produced by the saignée method.
A pale and lively rosé with an aromatic and fresh bouquet of raspberry layered with rose petals, spice, and mineral notes. It is crisp with a creamy, fruity palate that continues to a long finish.

Winery | Xinomavro is a native variety found in Northern Greece. The vines are grown in a single vineyard in the ‘Hedgehog’ subregion of the Amyndeon Plateau. It is situated at an altitude of 690 metres, with a northern orientation facing Lake Petron and Voras Mountain. The influences from the mountain and the lake contribute to the unique microclimate. The vines are planted at a density of 3,700 vines per hectare and yield 36.5 hectolitres per hectare after a green harvest and careful selection. The soils are sandy and sandy-clay over limestone, which offers excellent drainage. Precise cultivation occurs in the vineyard with a Regulated Deficit Irrigation (RDI) system in place. The grapes are certified as sustainably cultivated and are manually harvested. |
