After destemming, the berries were carefully selected and gently crushed. Alcoholic fermentation lasted ten days, followed by an additional 10-12 days of maceration on the skins. After the wine was racked and malolactic fermentation was complete, the wine was aged in Hungarian oak barrels and a small percentage in French oak for several months. During this phase, the wine was tasted consistently to determine the maximum expression of oak ageing. Badia a Passignano was bottled on the estate and continued to age in the bottle before being released for sale.

Winery | Badia, a Passignano Gran Selezione, is produced exclusively from the finest Sangiovese grapes harvested from its namesake vineyard in the heart of the Chianti Classico region. The region has been respected and appreciated for its outstanding wine production since 1000. The vineyards grow at an altitude of approximately 300 meters (984 feet) above sea level on soils rich in limestone with a fair amount of clay. The wine is aged in historic cellars under the Badia (abbey) of Passignano, which dates back to the 10th century. The Antinori family have been producing wine in Tuscany for over six centuries and exporting it for four, spanning twenty-seven generations of uninterrupted family ownership … and counting. The first recorded mention of the family dates back to 1180 when they worked in the silk trade. Winemaking was added to the family’s activities in 1385, and during the sixteenth century, the wines spread, along with Antinori’s reputation, to France, Flanders, Spain and North Africa. The purchase of the Tignanello estate in the mid-1800s marked the beginning of a remarkable period of expansion. Since then, through judicious acquisition of vineyards and an uncanny knack for developing iconic wines, Antinori has become Tuscany’s – arguably Italy’s – pre-eminent wine producer. Some of the wines – Badia a Passignano, Pèppoli, Tignanello and Solaia – are each the product of a single estate, while Villa Antinori and the Vin Santo are blends of selected lots from several of the family’s vineyards, including the flagship Tenuta Tignanello site |
