- Cervaro della Sala 2022 is a light straw yellow with greenish highlights. The nose offers aromas of chamomile, white flower blossoms, and flint. The palate is savoury, lively, and fresh, defined by notes of vanilla, citrus fruit, and light hints of hazelnut butter. This Mediterranean-style wine has outstanding ageing potential. It is a full-bodied, barrel-fermented blend of Chardonnay and Grechetto from Umbria and is regarded as one of Itlay's finest whites.
The vinification cellar was designed to take full advantage of gravity flow. This concept allows harvested berries and fermentation processes to be handled as gently as possible without mechanical pumps. The grapes are harvested in the early morning to preserve the fruit's purity and protect it from elevated daytime temperatures. The must, which has undergone maceration on the skins at a temperature of 10 °C (50 °F) for about four hours, is first transferred by gravity flow into tanks for decantation and clarification, then transferred into barriques where alcoholic fermentation takes place, followed by malolactic fermentation. In February, Chardonnay is ready to be transferred back into stainless steel vats and blended with Grechetto, which was fermented separately and did not age in oak. Subsequently, Cervaro della Sala aged in the bottle for several months in Castello della Sala’s historic cellars before being released for sale.

Winery | Niccolò Antinori bought the fourteenth-century Castello della Sala in 1940 to provide a source of white wines to match the excellence of his Tuscan reds. With the introduction of Cervaro della Sala in 1987, his dream was fully realized: this is one of Italy’s defining whites, as influential and sought-after as Tignanello. Bramìto is effectively a mini-Cervaro, further proof of Umbria’s affinity with Chardonnay; Conte della Vipera is a full, herbal, Bordeaux-inspired blend of Sauvignon and Semillon. The castle's inhabitants initially ruled over the whole province of Orvieto, so the range would not be complete without a flagship example of that DOC; the ‘Superiore’ designates much lower permitted yields and hence considerable concentration. |
