- A lively and persistent mousse preludes a complex bouquet with elderflower and tropical fruit notes enhanced by flint, incense and Mediterranean herbs. Elegant and textured with beautiful balance. Since 2004, Bellavista has been the “wine of honour” at the Teatro alla Scala and, above all, a partner that supports its great history in which we recognise the cultural roots of Italy.
The grapes undergo a slow and soft mechanical pressing in Coquard presses, followed by decanting at cool temperatures. Fermentation using inoculated yeasts in stainless steel at between 15°C and 18°C and partly in a barrel between 23°C and 28°C (around 32%), then matured for 6/7 months. The assemblage is created followed by vinification using the traditional method with second fermentation in the bottle, left on lees for around 18 to 24 months.
