- A fine and persistent mousse with a delicate bouquet of Mediterranean flowers combined with lively citrus notes. Dynamic and taut on the palate with a mineral finish that adds depth and character. Well structured with lovely balance and natural freshness
The grapes undergo a slow and soft mechanical pressing in Coquard presses, followed by decanting at cool temperatures. Fermentation of free run, 1st and 2nd pressed juice takes place using inoculated yeasts in stainless steel at between 15°C and 18°C and partly in barrel between 23°C and 28°C (around 32%), then matured for 6/7 months. The assemblage is created, followed by vinification using the traditional method, with second fermentation in the bottle, which is left on lees for around 30 months. | Winery | Exclusively from 60 vineyards, 91 plots, from the family’s own 200 ha of vineyards, the main ones being Favento, Brede, Uccellanda, Rocchetta, and Porte Alte. Vines are trained in a combination of Guyot, spurred cordon and Sylvos, double-arched, simple-arched with a plant density of 5000 vines per hectare and cultivated using organic fertiliser and sustainable minimal viticultural practices. The average age of vines is 27/28, yielding Chardonnay of 100 ql/ha, Pinot Nero 90 ql/ha, and Pinot Bianco 90 ql/ha. Grapes are hand-picked in small 13 kg crates. |
