Bellavista Franciacorta Riserva Vittorio Moretti Lombardy 2016

The grapes undergo a slow and soft mechanical pressing in Coquard presses, followed by decanting at cool temperatures. Fermentation using inoculated yeasts in stainless steel at between 15°C and 18°C and partly in small white oak barrels between 23°C and 28°C, then matured for 6/7 months. The proportion of oak is 46%, with the rest being made of stainless steel. The assemblage is created, followed by vinification using the traditional method, with second fermentation in the bottle, which is left on lees for 70 months. The Riserva is completely riddled by hand, using natural cork for the second fermentation and the disgorgement is performed exclusively by hand. Minimum 4 more months in the bottle after disgorgement. Zero dosage and only produced in the best years. 

With a delicate and persistent mousse, this wine personifies the joie de vivre, creativity and indomitable spirit of Vittorio Moretti. Fragrant, rich in floral notes of elderberry and jasmine combined with an intriguing hint of flint and incense together with Mediterranean wild herbs and tropical fruits. An explosion of flavour envelops the palate courtesy of the finesse of the bubbles. Savoury, mineral and citrus flavours lead to a dynamic and lingering, pristine finish.
