- A distinctive sparkling wine displaying complex notes of medlar and flowers, Autumn peach and mango together with nuances of patisserie and noisette. A smooth and creamy texture with the perfect balance between ripeness and freshness that underlines the characteristics of the vintage with excellent depth and volume.
The grapes undergo a slow and soft mechanical pressing in Coquard presses, followed by decanting at cool temperatures. Fermentation using inoculated yeasts in stainless steel at between 15°C and 18°C and partly in small white oak barrels between 23°C and 28°C, then matured for 6/7 months. The proportion of oak is 48%, with the rest being made of stainless steel. The assemblage is created followed by vinification using the traditional method with second fermentation in the bottle, left on lees for a 48 months. The 'Saten' style is distinguished by its lower pressure at maximum 5 atmospheres, resulting in a creamy texture.

The Chardonnay grapes used to make this wine come from 30-year-old vines on hilltop vineyards featuring the best south and southeast aspects, planted at a density of 5,000 vines per ha and yielding 100 quintals of grapes per ha.
