The fruit was immediately crushed, destemmed, and chilled to a drainer and screw press to minimize juice contact with the grape's red-colored skins. The free-run juice portion was fermented separately at 14° to 16°C using a carefully selected yeast to optimize varietal expression. Finally, the wine was blended and filtered for bottling as soon as possible to retain freshness and crisp fruit flavours.

This Pinot Grigio displays subtle aromas of freshly cut lime and apple. The palate is crisp and refreshing and reveals flavours of pear, fresh lime, and lemon grass, which combine with grapefruit freshness to provide good length and intensity.
