- Founded in 1979 by wine merchant Mario Caramel, Canevel's goal remains to highlight the true potential of the Glera grape. The name, meaning ‘small cellar’ in the local dialect, is a testament to the boutique origins of this now prestigious producer.
After gentle pressing, the juice was left to settle for eight hours at 15ºC. It then underwent temperature-controlled fermentation in stainless steel tanks, followed by a second fermentation at low temperature in sealed tanks. The wine was then aged in the tank for one month before bottling.

The sheer drinkability of their DOC bottling is impressive enough, but it is the DOCG wines and in particular the single vineyard Terre del Faè, made without dosage, that highlight the ambition of this benchmark producer. |
