- The champagne has a striking golden-grey hue and wonderful, persistent bubbles. It offers prominent elderberry and violet notes, while the pinot pulp softens the limestone minerality. The discreet dosage and delightful bitter flavours achieve a harmonious balance. The bouquet opens with floral violet and elderberry notes, leading to berry and spiced orange flavours on the palate. The ripe fruit is tastefully enhanced by the lingering salinity evident in the finish.

The Drappier family estate was established around the magnificently preserved medieval Abbey. Today, it is managed by Michel Drappier and is used to store and age the exceptional wines he produces. We planted our vineyard in Urville, the terroir that welcomed the Pinot Noir grape variety that now runs in our veins. We manage it according to organic and natural practices. Our vineyards are like family archives that perpetuate our history. We grow heirloom grape varieties that deserve to be remembered: Fromenteau, Arbanne, Petit Meslier, and Blanc Vrai. While many seek sophisticated excellence, we prefer natural and authentic qualities. We also highlight the many facets of our terroirs through our vinification techniques: our low sugar dosage and moderate use of sulfites, especially in the production of Drappier Brut Nature Sans Soufre.

Winery | Corvallis is the name Saint Bernard gave to the abbey he founded in 1115 when he brought vines to the Aube region. The wines are vinified and aged in cellars built in 1152 by the monks from the abbey. Today, the cellars are owned by the Drappier Family. For one of Champagne’s most forward-thinking producers, Drappier has no shortage of historical roots. An eighth-generation family business, the house was founded in 1808 and occupies magnificent twelfth-century cellars built by Cistercian monks. Indeed, members of this monastic order travelled up from Burgundy to the Aube region nearly a millennium ago and planted the early ancestor of Pinot Noir. In the early twentieth century, however, Pinot Noir had fallen out of favour in the region. Drappier could sense its potential and was the first to replant it in the 1930s, earning ridicule from neighbours until the quality advantages became clear.
