- The bouquet unfurls with citrus aromas, with a subtle mineral undertone that reveals a gun flint character. The textured flavour of white-fleshed fruits is perfectly balanced by remarkable freshness, creating a beautiful, long finish.
Fermentation began in stainless steel tanks with neutral yeasts preserving the integrity of the fruit and terroir. The wine remained in the stainless-steel tanks for six months to mature on the lees, with regular bâtonnage enriching the aromatic complexity. It then spent six months in stainless steel tanks and was bottled after a full year of maturation, with a further year in bottle to achieve optimum stability.

Winery | Rémy Graillot has introduced numerous plant specimens that are in harmony with the existing biodiversity. Among the one hundred and thirty-six species of trees and shrubs listed, the estate boasts many fruit trees, including hazelnut, pear, fig, plum, cherry and quince, providing an oasis for wildlife. The estate is distinguished by its flint terroir, giving rise to wines appreciated for the finesse and strength of their minerality. Flint has the advantage of capturing the heat accumulated during the day and releasing it at night, a phenomenon that intensifies the ripening of the grapes. The vineyard is manually cultivated and certified organic. |
