- A full-bodied, rich, yet seamlessly elegant Roussillon expression with abundant notes of kirsch and blackberry layered with ground pepper, garrigue herbs, and spice. Classic richness is perfectly balanced by considerable elegance. The vineyard is certified organic, and no herbicides or chemicals are used. Yields are kept low to ensure a good concentration of pure fruit flavours, and the fruit is hand-harvested.

The grapes were destemmed, and 50% of the fruit was transferred to 500-litre open-top barrels for maceration with selected yeasts, which lasted three to four weeks. Manual punch-downs took place to extract the colour, flavour and fine tannins. Then, each barrel was emptied, and the must was pressed, and the wine was returned to the same barrels to finish fermentation. The cooper closed the barrels at the estate. Maturation lasted 12 to 14 months; half the barrels were new oak, and half were second passage. The remaining 50% was vinified in earthenware amphora to retain the delicacy and
the freshness of the fruit.

Winery | A blend of Syrah, Grenache and Carignan, the vines thrive at an elevation of 350 metres in the Maury terroir of the northern part of the Roussillon. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees, which balance the hot, arid summers. The terroir is made up of a mosaic of brown and black schist soils dating back to the Cretaceous period. The schistous marl produces shallow soils, which force the vines to send their roots deep in search of water and nutrients. The vineyard is certified organic, and no herbicides or chemicals are used. Yields are kept low to ensure a good concentration of pure fruit flavours, and the fruit is hand-harvested. |
