- Aromas of liquorice, blackberry, tar and peony unfold into a palate of wonderful depth and texture with a balancing hint of salinity and a long, penetrating finish.
The grapes underwent whole cluster, traditional co-fermentation in concrete tanks with wild yeast. Following a gentle, minimal intervention vinification, the wine was aged in a combination of tank, Burgundy casks and demi-muids for 12 months. The wine was bottled without fining or filtration.
