- Refreshing, vibrant, zesty citrus notes and a delicate floral character from the Sauvignon Blanc are balanced by creamy, honied tones from the Semillon in this deliciously crisp Bordeaux Blanc. Dry, with a rounded texture underpinned by refreshing acidity through to a vivacious finish. The grapes were picked at the optimum harvesting date, to ensure they had reached the perfect level of ripeness and concentration. The timing of the picking is the most crucial step in the winemaking process. The Sauvignon Blanc and Semillon grapes were vinified separately and underwent a long, slow fermentation with selected yeasts. Vinification occurs at cool temperatures; this technique helps preserve the purity of fruit and fine aromatics. The wine was aged in cement vats on its lees for three months to impart a delicate texture.

Winery | The grapes come from vineyards in two neighbouring villages: Saint Germain du Puch and Nérigean. The vineyards are located opposite Saint Emilion, on a plateau at around 70 metres elevation. The soils here are rich in clay, which imparts good water retention properties that help to sustain the vines during the warm summers. The high clay content also promotes the production of full-bodied, concentrated wines. The maritime climate is greatly influenced by the cooling breezes which flow in from the Atlantic and imbue the grapes with natural, balancing freshness. The vines are cultivated organically, and they are farmed without the use of synthetic sprays; the vineyard has been converted to certification since 2020. The vineyard is also certified as Bee Friendly, and great attention is paid to the pollinators within the vineyard. Careful canopy management takes place to maximise leaf cover and limit yields to concentrate the flavours in the grapes. The vines have been cultivated sustainably since the 1980s, with cover grasses, measures to ensure the optimum fertility of the soils and promotion of biodiversity to promote the longevity of the vineyard. |
