- An intense mineral nose followed by fresh vibrant fruit, crisp acidity, and citrus notes. Beautifully balanced, this is pure and round on the palate, with a creamy texture and a long, salivating finish. Classic saline Chablis.
The grapes were harvested at optimum maturity and fermented with natural yeasts in temperature-controlled vats using organic principles. The wine spent nine months in stainless steel vats and was made without oak influence to retain the purity of fruit and to let the characteristics of the Premier Cru Montmains terroir shine through. Arestricted use of sulphur was used during the vinification and the wine was lightly filtered, before bottling.

Winery | Montmains is a Premier Cru vineyard in Chablis, which stretches along an exposed hillside to the southwest of the town of Chablis itself. It is renowned for producing fresh, elegant wines with good minerality. Maud and her family believe in organic farming and minimal intervention; all their vineyards are organically farmed. The Double Guyot-trained vines have an average age of 45 years and are grown in Kimmeridgian soils, which are rich in clay and limestone with fossilised seashells. The vines are planted at a density of 5,700 vines per hectare, and yields are kept to a maximum of 55 hectolitres per hectare. Maud believes in highlighting terroir and produces her wines in an unoaked style, allowing them to reveal the soil's purity, minerality and vitality. |
