The grapes were brought to the winery in small bins and sorted by hand to ensure the finest quality. Fermentation began in temperature-controlled stainless steel tanks, and 89% was racked into French oak barrels to complete fermentation in the old stone cellars, with 12% maturing in stainless steel. The wine did not undergo malolactic conversion and was aged for 11 months on its fine lees for additional depth, complexity, and texture in French oak barrels, of which 52% were new and 48% were used once.
Bright and lively, with aromas of lemon zest, kumquat, toasted almonds layered with a hint of wet stone and flint. It is enchanting, with a silky entry and vibrant flavours of grilled citrus, melon and toasted oak that expand across the mid-palate all the way until the finish.
