- A gastronomic Sancerre showing complex and elegant flint aromas, candied lemon, pineapple, blackcurrant bud, almond, and light smoky notes lead to a classy freshness, chiselled palate, and a long finish.
The grapes were slowly pressed, and the must was fermented with indigenous yeasts in stainless steel tanks at controlled temperatures of between 18 to 23°C. Vinification took place inertly; nitrogen protected the wine from contact with the air. Refinement occurred in terracotta amphorae on the fine lees, lasting 10 to 15 months.
A gastronomic Sancerre with complex and elegant flint aromas, candied lemon, pineapple, blackcurrant bud, almond, and light smoky notes leads to a classy freshness, chiselled palate, and long finish.

Winery | The grapes come from a single vineyard called Cote de l'Epee, a south-facing vineyard situated 250 meters above sea level in the Sancerre appellation. The vines have an average age of 50 years and are planted at a density of 8,000 to 10,000 vines per hectare, yielding between 40-45 hl/ha. The soils comprise a combination of Terres Blanches with calcareous subsoil. The vineyard is certified organic, chemical preparations are not employed and the vineyard is converted to biodynamic certification. The biodynamic philosophy recognizes the connection between all living things, the importance of biodiversity, and sustainability, following the lunar cycles, earth rhythms, astrology, and the interconnection between these energy sources to dictate the timing of viticultural activity. The vineyard is cultivated manually, except ploughing and the grapes are hand-harvested. |
