A Volcanic Greek White Wine with Wild Complexity
The 2024 vintage is 100% Assyrtiko, fermented exclusively with wild indigenous yeasts, enhancing the wine’s textural depth and layered profile. This natural fermentation technique brings out subtle funky nuances and a savoury character that beautifully complements the hallmark saline minerality of Santorini wines.
With an alcohol content of 14% ABV, just 2g/l residual sugar, and a dryness level of 1, this is a bone-dry Greek white wine made for lovers of precise, structured whites. Its high acidity and vibrant tension make it a perfect wine for seafood, grilled dishes, and complex Mediterranean flavours.

Winery | The Assyrtiko vineyard is located in Santorini. The terroir is recognised worldwide for its tremendous historical roots, as the vineyards in this area date back 3,000 years. The low-yielding, 80-year-old, self-rooted vines are grown in soils which are poor in organic matter. The high sand content has ensured they have never been affected by phylloxera. The soils are also volcanic: porous with a high mineral content, which imparts the mineral quality to the wine. The long sunshine hours, lack of rainfall, sea mists and strong summer winds all contribute to the unique microclimate. The surrounding Aegean Sea is a "climatic buffer" that softens the climate, reducing extreme conditions. The vines are trained on traditional basket-shaped systems called "kouloura". |
