- This meticulously crafted Champagne results from a careful and precise production process that aims to highlight a tantalizing and multi-layered palate. The rejuvenating citrus fruit flavors take center stage, offering a refreshing tangy sweetness. These vibrant notes are accentuated by subtle mineral undertones that add depth and complexity to the overall experience. Furthermore, the Champagne boasts refreshing hints of crisp apple, rounding out the flavour profile with a natural sweetness and a crisp, juicy finish.
This cuvee was made naturally and without the addition of additives. The grapes were pressed using a pneumatic press, followed by a long "débourbage" or settling period. The alcoholic fermentation took place in stainless steel tanks using their "pied de cuve", a technique used in natural winemaking to employ natural yeasts. A small batch of must is used to start a spontaneous fermentation using indigenous yeasts; once this has been deemed successful, this “pied de cuve” is added to the remaining must to start the fermentation process. 50% of the wine was fermented in stainless steel and 50% in three-year-old French oak barrels. The wine underwent natural malolactic fermentation and was bottled the following April. The wine spent one and a half years ageing on its lees in the bottle.
A precise and chiselled Champagne with a mouth-watering palate. Mineral undertones and crisp apple notes support invigorating citrus fruit flavours.

Winery | The vineyard is spread over 42 parcels in and around the Premier Cru village of Vrigny. It is farmed according to biodynamic methods and is certified organic. The vineyard comprises eight hectares, and the vines grow over gently rolling hills at altitudes of 150 metres above sea level. The grapes for this cuvée come from a blend of two parcels from Vrigny: La Côte de Glaises et les Cumines; the soils are sandy loam and calcareous marls. The Chardonnay vines are pruned according to the Chablis method, with the reds according to the Cordon method. The vineyard is ploughed by horse during the year to prevent soil compaction, allowing the top layers of soil access to oxygen and boosting the soil's overall health, vines and grapes. Grasses and plants are used between the vine rows to impart valuable nutrients to the soil. Harvested by hand. |
