Cellar master Xavier Berdin skillfully blends varieties, growths and reserve wines with harmony and passion until the perfect balance is reached: the epitome of the Palmer & Co. style. The grapes were carefully hand-harvested, and vinification took place using the traditional method. In the spirit of perpetual, true reserve wine, this Chardonnay-dominated blend was composed of 30 to 35% reserve wines, imbued with a unique style and remarkable consistency. This cuvée was matured for three years on
the lees in bottles in the 18-metre-deep chalk cellars. With a dosage of 34- 35g/l, the Demi-Sec style is balanced by an elegant acidity, resulting in a fresh, harmonious style.

A Demi-Sec style Champagne is luscious and fresh, offering a true explosion of fruity apricot and pear, combined with tropical touches of mango, caramelised pineapple and nuances of zesty pink grapefruit.
