- A crisp Sancerre with floral and mineral aromas leads to a lively, balanced palate with concentrated citrus fruit, a lovely sensation of freshness, and great aromatic persistence. In most of the Languedoc, the 2023 growing season started well, with an average winter, dry in some places but sufficient rainfall in others and no damaging frosts. Rainfall in May and June required vigilance in the vineyards amid disease pressure in the humid climate. Much of the region experienced extreme drought during the summer months, and a four-day heatwave starting on the 20th of August brought temperatures of 43°C and resulted in an early harvest.
The grapes were harvested at perfect maturity and rigorously sorted. After a slow and gentle pressing at low pressure, gravity ran the juice into the tanks to be settled. The larger impurities were naturally decanted at cool temperatures for 12 to 16 hours, allowing the clear juice to be racked off afterwards. Alcoholic fermentation occurred with wild yeasts in temperature-controlled stainless-steel tanks at 15 to 20°C. The wine was then aged on its fine lees for eight months to develop its full potential.

Winery | This Cuvee comes from the selection of the old vines planted on the clay-flint hillsides of Menetreol-sous-Sancerre and Sancerre. Grown sustainably without herbicides, this rare terroir gives the wine remarkable ageing potential. The south-to-south-easterly exposure ensures that these hillside plots enjoy optimal sunshine every year. Organic fertilisers limit yields and vigour, concentrating the fruit and terroir flavours in the berries. The estate is certified with the HVE Level 3 certification, which officially recognises the environmental performance of winegrowers, including biodiversity conservation, plant protection strategies, managed fertiliser use and water resource management. |
