- The Petit Chablis is more fruity than the other appellations of Chablis while retaining a hint of minerality typical of its vineyard. The Portlandian limestone subsoil and South/Southeast orientation give it a spicy nose with notes of lemon zest, fresh grass, and white pepper. The palate offers fresh almonds, sea salt, and lemon zest. It is a lively, well-balanced, smooth wine with a delicate, layered minerality.
From this intimate expression of the terroir to the creation of the bottles, our work is carried out with respect for the product. For the production of the wines, we prefer to use wooden vats because of their natural, organic character. We take a non-interventionist approach to vinification, which aims to reveal our wine's true character without distortion. All our bottles are sealed with wax, stamped by hand, wrapped in tissue paper, and placed in a box designed especially for this range with seven bottles.
