The entire harvest passed through an optical sorting machine, the first winery in Rías Baixas with this system, discarding grapes that did not meet the strict parameters. After cooling and maceration, the fruit was pressed in an inert atmosphere to prevent oxidation. After racking, the clean must be fermented at 15°C. A proportion of the Albariño underwent malolactic conversion, resulting in a softer expression. Each variety was vinified separately before the final blend. The wine rested on its fine lees until bottling, which were periodically stirred to keep them in suspension, thus adding complexity to the wine.

Winery | The Albariño grapes come from the estate vineyards in O Rosal. The blend is supplemented by other native varieties: Caiño Blanco, Loureiro, and Treixadura. Harvest starts at the Silvosa vineyard in O Rosal, followed by the Viñadeiro vineyard in O Salnés. After an initial selection of bunches in the field, the grapes are hand-picked into small boxes and then transported with refrigeration to the winery to retain the fruit's integrity. |
