- The wine has an enticing salmon pink colour, much like the most popular rosé Champagnes. The aromas and flavours of bright summer fruits are immediately obvious, with a hint of spice. It is, however, drier on the palate than you would expect, with a subtle biscuity character that complements the lively fruit.
Grapes are whole clusters pressed and fermented in a mix of stainless steel and old oak barriques with a high proportion of solids at medium-cool ferment temperatures with some aeration. The wine then undergoes a secondary fermentation in the bottle, as per the traditional method, spending just a few months on its lees to preserve the glorious red fruit. No fining and the wine is cross flow filtered.

Winery | Grapes are sourced from Hollands Farm and Clay Hill Vineyard in Essex, where soils are primarily composed of clay, gravel and sand. The vineyards are sustainably cultivated, and the vines are minimally pruned using the VSP training system. Long, dry summers give Essex a head start. Fruit flavours are always a tad more exuberant than elsewhere, and the body of the wine is inherently fuller. |
