- The dry weather returned at the beginning of September, bringing a welcome north wind that blew for a few days, helping return the grapes to health. Good amounts of sunshine helped to speed the ripening of the grapes. We began our harvest of the white grapes on the 11th of September as they had benefitted immensely from the weather during the first fortnight of the month. The Chardonnays were superb, while the Pinots required a certain amount of triage. Harvest was fast-paced and intense, thanks to the good weather, which continued throughout the month.
- Roasted salmon, roasted chicken, grilled red meat: beef, lamb chops, osso bucco, stew, ragout, bœuf bourguignon, duck, partridge, quail, deer, young wild boar, teppanyaki beef, mashed potatoes with salted butter, Cîteaux, Mont d’Or.
Gevrey Chambertin is the northernmost of the great communes of the Cote de Nuits. There are 26 Premiers Crus and 8 Grands Crus. Half of the Premiers Crus of Gevrey lie on the Grands Cru's east-facing slope; the other half occupies a steep, southeast-facing slope to the north, with calcareous clay soils. The Chambertin vineyard is situated on deep, chalky soil and clayey at the surface, making the wine both powerful and round. Destemmed grapes ferment in vats for 3 to 4 weeks. Ageing occurs in oak barrels produced by our cooperage Cadus for 18 months.
