The direct pressing of the grapes is preceded by a short cold maceration to extract colour and the finesse of the aromas in the grape skins, followed by fermentation at controlled temperatures.

Winery | The winery is located in Provence, south of the department of Vaucluse, in the southernmost area of the Rhone Valley. It is in a protected natural area in the heart of the Luberon Regional Nature Park. On both sides of the Aigues Valley, the vineyard is mainly planted in sandy soils and enjoys a very sunny climate swept by the Mistral.
