- Pale yellow with greenish highlights and a fine, lingering mousse. It is delicate and refined on the nose with initial hints of fruit: grapes, Golden Delicious apples, lime and pink grapefruit, giving way to riper notes of pears, plums, white melons and wisteria. Creamy and intense in the mouth with good structure through to a harmonious and elegant finish.
The selected hand-picked grapes are vinified by gravity method and fermented off the skins at a controlled temperature of 15 - 18°C. The prise de mousse and lees maturation occur typically for approximately 90 days in pressure tanks, on selected yeasts, at a temperature of 13 - 14°C. The wine is aged for at least one month before distribution.
