- Pale yellow with straw highlights and continuous copious bubbles. The nose is soft and well-defined, with clear hints of green apples, plums, pears, and apricots, which alternate with floral notes of jasmine, acacia, and wisteria. It is lean and dry, contrasting the first impression of sweetness. It is subtle and harmonious on the palate, with the fresh fruit pulp component still dominant, culminating in a well-balanced, intense, lingering finish.
The selected hand-picked grapes are vinified by gravity method and fermented off the skins at a controlled temperature of 15 - 18°C. The prise de mousse and lees maturation usually takes place for approximately 90 days in pressure tanks on selected yeasts at a temperature of 13 - 14°C. The wine is aged for at least one month before distribution.
