- An aromatic Bourgogne Chardonnay, showing floral and fruity notes underpinned by honied tones through to a beautifully balanced palate with a fresh, elegant finish.
Michel Gayot limits the intervention during vinification, allowing the grapes and the terroir to express themselves. A calm, natural settling occurred 24 to 48 hours
before fermentation with selected yeasts occurred in stainless steel tanks. Maturation lasted 12 months in stainless steel tanks to retain the purity of fruit and freshness.

Winery | The vines are grown in the Bourgogne Chardonnay appellation, which benefits from a cool, continental climate, where warm sunny days during the ripening period are tempered by cool nights, which imparts a natural balancing acidity to the grapes. The soils in the vineyard are a combination of limestone and clay, which help retain moisture during dry weather and offer good drainage in cooler weather. The vines are cultivated according to the traditional methods of the AOC and are carefully tended with utmost respect for the terroir and environment. Once they have reached optimum maturity, the grapes are picked by hand. |
