- Richly aromatic, with notes of white flowers, almonds, beeswax, and cinnamon, this Saint-Aubin 1er Cru reveals its complexity. Its delicate, creamy palate shows beautiful balance.
Michel Gayot limits the intervention during vinification, allowing the grapes and the terroir to express themselves. Fermentation took place in stainless steel vats to retain the purity of the fruit and the nuances of the En Remilly terroir. The wine underwent malolactic conversion in French oak barrels, rounding out the palate. Maturation lasted
from nine to 12 months in 228-litre French oak barriques (20% new), which imparted texture and complexity.
