The grapes were harvested at optimal maturity, and the clusters were sorted and gently pressed. Fermentation took place in temperature-controlled vats, and the wine rested in the vat for three months to retain the freshness and aromatic qualities of the Cortese variety before being bottled.

Winery | The grapes are grown in a vineyard facing east and southeast, which optimises the vine's exposure to the sun. The vines are planted in white soils which are mainly composed of limestone and a small amount of clay, which help to impart elegance and freshness to the resulting wine. Michele Chiarlo is one of Piedmont's most prestigious winemakers, producing outstanding wines from some of the most exceptional sites in Piedmont, including Barolo’s world-famous Cannubi and Cerequio vineyards. Founded in 1956 by Michele Chiarlo and now run by his sons Alberto and Stefano, the Chiarlo philosophy “is to capture the terroir” from their sustainably cultivated vineyards, which hold the VIVA certification.
