Bodegas Bhilar
Situated in Elvillar, Rioja Alavesa is a boutique winery managed by David Sampedro and Melanie Hickman. The winery focuses on crafting terroir-driven wines using indigenous grapes, adhering to sustainable agricultural practices, and minimizing intervention during winemaking. The estate has been under organic cultivation for over 20 years, with a transition to biodynamic practices occurring 15 years ago. In 2014, the winery shifted from tractors to horses for vineyard work, obtaining Demeter certification in 2022.
David Sampedro Gil, the winemaker and viticulturist, has an intimate connection to the vineyards, having been raised in the same locale. His winemaking ethos centres on creating distinctive wines that authentically embody the region's characteristics while upholding sustainable principles. The winery's sustainable design incorporates solar power and partially subterranean construction, featuring concrete fermentation tanks to regulate temperature.
Elvillar's landscape is distinguished by its ancient vineyards, rocky limestone soils, and high-altitude vineyards, which contribute to a diverse viticultural terrain. In 2020, Tim Atkin MW honoured Bodegas Bhilar with the title of Winemaker of the Year, further attesting to its dedication to producing exceptional wines.
