30% of the wine has not undergone malolactic fermentation, preserving natural freshness. The grapes are vinified by parcel, and the wine is aged for 6 months on the lees in stainless steel tanks. Once in a bottle for the second fermentation, the wine is aged for 10 years. Dosage is low at 6/7 g/litre and the wine has around 30% of reserve wine.
