- Cherry, blackcurrant, and vanilla notes combine with capsicum in an approachable Cabernet style. This Cabernet Sauvignon opens with aromas of dark red fruits and blackberry pie accented with a touch of clove. It is opulent on the palate, with rich flavours of blackcurrant and plum that intermingle seamlessly with the soft, round tannins to create a long, delicious finish.
Winemaking techniques were used with minimal intervention to allow the true Californian terroir to shine through. The grapes were fermented in stainless steel tanks with native and selected yeasts. Minimal pump-overs were performed to avoid over-extraction of tannins. Minimal use of French oak influenced the maturation, which lasted for six months, adding subtle complexity.
