The Terrasses du Larzac appellation is located north of the Herault department, where the vineyard is 150 to 350 meters above sea level. The climate has an extreme character; hot, sunny days are tempered by cool nights and cool, rain-bearing currents of the Larzac. These exceptional thermal amplitudes slow down the ripening of the berries and impart the wines with remarkable aromatic precision. The terroir is divided between the famous ‘ruffe’ soils (fine-grained brilliant-red sandstone, rich in iron oxide) and areas of phonolitic schist. The vineyard is established on clay-rich subsoil, which retains soil moisture and allows optimal grape ripening without hydric stress despite the summer heat.
