The grapes were hand-harvested, partially destemmed and then foot-trodden to gently extract the must. Fermentation took place spontaneously with indigenous yeasts on the skins. The wine was then pressed and transferred to used 225-litre French oak barrels, which matured for six years. The wine was racked twice during the ageing process.

Winery | Due to the diverse landscape of Elvillar, David wanted to showcase several vineyards he feels are truly unique and expressive. Each of these vineyards has its own distinct soil, surroundings, sun exposure and microclimate and their wines pay homage to the potential of this region. For this wine, the Tempranillo grapes come from a very special, 0.68-hectare single vineyard called ‘La Revilla’, which was planted in 1925. Each of these old, gnarly and low-yielding vines is driven by a stake and biodynamically farmed, with careful manual cultivation, ploughing by horse and manual harvesting. The grapes produce concentrated juice, and the structure of these ancient clay and limestone soils is palpable in the glass. |
