- A GSM with an enticing cascade of juicy brambly berries, cherry, plum and blackcurrant pastille fruits, complemented by delicate smoky notes.
Each variety was harvested separately at varying stages. The Grenache and Syrah were fermented, while the Cinsault and Mourvèdre grapes were crushed and destemmed. Each batch was fermented separately in open-top fermenters with natural yeast. A short post-fermentation maceration occurred before the wine was pressed and transferred to 500-litre and 300-litre barrels for malolactic conversion. The wine spent eight months in the barrel before final blending and bottling.

Winery | The grapes for this wine were carefully selected from pockets of the vineyard specifically for their fruit flavours and mouthfeel. The vineyard is planted at the foot of the Du. Toitskloof Pass in granite-rich soils with clay and quartz. The clay element offers high water retention properties and releases much-needed water during the warm summer. The lowest part of the estate is 220 metres above sea level, climbing to 330m at the highest part. At this altitude, the vines are exposed to strong winds that naturally reduce yields and offer a much-needed cooling influence in Paarl's warm, dry climate. The vines are planted using a combination of bush and trellised methods. The vineyard is manually cultivated, with a commitment to sustainable farming. Natural predators are used instead of pesticides, and the vines are hand-harvested. |
