- This 1er Cru is sumptuously perfumed, with silky, luscious red berry fruit flavours and good concentration, complemented by a fresh undertone. The wine has a sleek texture and smooth tannins, offering a refined, pure Pinot Noir experience. It is long-lasting and aromatic. The 2019 vintage, like the 2018, was characterized by a hot and dry season, resulting in an early harvest for reds on the Cote de Beaune starting on the 7th of September. However, the 2019 wine has a distinctly different style than the 2018 vintage; it is more charming, perfumed with red fruit and offers a more engaging and flowing experience than the darker, firmer, and more compact 2018s. 2019, the terroir played a more prominent role than the vintage character.
The fruit was carefully sorted and 100% de-stemmed, followed by a cold soak for seven days. One rack and return got the fermentation going, which took place with wild yeasts. Just two pigeages by foot for gentle extraction, carefully standing on top of the fruit and sinking into it rather than a stomping action. That’s it. Maturation took place in French barriques, no new oak, to allow the nuances of the terroir to shine, lasting until the following winter.

Winery | Santenots is a highly regarded 1er cru in Volnay. The fruit for this cuvee comes from Nicolas Rossignol's two-hectare parcel, which is divided into three sections according to soil type. The top half on the Volnay side is stonier, closer to the Bathonian limestone bedrock, making tight, mineral and vigorous Santenots. As the soil becomes sandier towards Meursault, the oldest vines make supple, elegant, refined and lighter wine. The third section is below; the clay soils produce softer and richer wines. His vineyard stands out for the high and healthy canopies his grandfather initially encouraged him to grow. Nicolas has a pragmatic approach to viticulture and takes elements from biodynamic viticulture that work for him; the lunar calendar is followed for pruning. The vineyard management is a labour of love: his focus is firmly on the life and energy of the soils. They are lightly ploughed, and the fruit is hand-harvested. |
