- A silky, smooth Pinot Noir shows beautiful balance, with aromatic notes of wild raspberry, floral notes of violet, and a touch of spice on the elegant finish.
The grapes were 100% destemmed and underwent fermentation in stainless steel tanks with wild yeasts, lasting for two to three weeks. Vinification took place without a cool pre-fermentation; however, the final fermentation took place at warm temperatures,
gently coaxing out the colour, flavour and aromatics. The wine was gently pumped over by gravity, and punching down took place in the traditional manner of the foot. Maturation lasted for 12 months in a combination of previously used 228-litre French oak barrels and 600-litre Demi Muids from a blend of various forests in Central France.

Winery | The vines are grown in various, carefully selected plots in the Côte Chalonnaise and the Côte de Beaune. The vines benefit from a cool, continental climate, where warm sunny days during the ripening period are tempered by cool nights, which impart a natural balancing acidity to the grapes. The soils vary and offer subtle nuances from each terroir in the resulting blend. The vines are densely planted at 10,000 per hectare and cultivated using traditional methods with a large and aerated canopy. They are sustainably farmed with practices such as using fresh compost from local farms to nourish the vines. General treatments include copper and sulphur, and mechanical ploughing occurs to maintain the vineyard soils. Once the grapes have reached optimum maturity, they are hand-harvested. |
