- Expressive red cherry, plum, and violet aromas lead to a beautifully balanced palate with plush, well-integrated tannins through to a long, exquisite finish. The 2021 season was very challenging. Starting with a warm spring, a bud burst occurred at the end of March. However, catastrophic frosts occurred on 3rd April, with temperatures plummeting to -7°C and destroying 90% of the shoots. Flowering occurred at the end of June, followed by a hot summer and enough rain to reach good maturity. Harvesting started on 23rd September, and due to the frost, the crop was tiny, but the quality was excellent.
Vinified following a philosophy of minimal intervention. Fermentation took place at 30% whole bunch of fruit, adding complexity and wild yeasts in temperature-controlled stainless steel tanks lasting three-and-a-half weeks. Pump-overs took place by gravity and pun. This wine was made with minimal intervention. The grapes were gently pumped over and punched down by foot for added complexity. There was no cold soak, but the temperature increased towards the end of fermentation. Winery | Planted in 1963, the plot of old vines is in the centre of the Grand Cru Clos de Vougeot vineyard. The hillside plot is on a gradient of around 3% and faces east, which benefits from the gentle morning sun, giving the grapes time to develop complexity, while cooler overnight influences bring balancing acidity. The old vines are gown in complex, stony, deep clay and limestone soils and are densely planted. Cultivated according to the traditional methods, they are maintained with a large and aerated canopy for sun protection in the warmer vintages of late. They are sustainably farmed with practices such as using fresh compost from local farms to nourish the vines. General treatments include copper and sulphur, and mechanical ploughing occurs to maintain the vineyard soils. Hand-harvested at optimum maturity. |
