The grapes are 100% destemmed. Fermentation takes place in concrete tanks. Vat times are long (from 4 to 6 weeks), and a gentle extraction is performed by pumping-over. It aims at obtaining fine and delicate tannins.
Aging 100% in French oak barrels with a low proportion of new oaks (10-15%) for 14 months.
The crop is manually harvested at maturity, avoiding over-maturation.
Appearance: deep ruby colour.
Nose: redcurrant, leather, red crushed berries with a hint of toffee, incense, and curry.
Palate: This powerful and generous wine expresses itself with delicacy thanks to its very delicate tannic structure. Intense flavours of ripe fruits and spices combine to a fine acidity—a hyphen between richness and strength reflecting perfectly the terroir of Heathcote.

Winery | The Chapoutier family has long been known as a leading light in the Rhone Valley. Still, in 1997, Michel Chapoutier expanded its horizons into the New World, specifically the Australian region of Victoria. Initially making wines with renowned local wineries such Jasper Hill and Giaconda, 2009 Chapoutier purchased the Shays Flat and Landsborough Valley estates in the Australian Pyrenees, giving birth to the wholly owned Domaine Tournon. Unsurprisingly, the focus is on Shiraz, which, under Chapoutier’s skilled hand, manages to evoke the minerality and elegance of the Northern Rhone whilst still expressing the soil and climate of Victoria. |
