- It is an opulent, meaty, and complex wine with notes of leather and incense together with raisined fruit, which is savoury and full-flavoured. It is a majestic wine with expressive aromas of wild berried fruit and ripe black cherry, layered with nuances of rose petals, pungent balsam, and spice. Succulent red fruit notes are complemented by spice, pipe tobacco, and graphite, with supple tannins and a lengthy, intense finish.
The grapes were harvested by hand and left to dry for two weeks before pressing. The musts were fermented with selected yeasts in specialised temperature-controlled fermenters that allowed a lengthy maceration on the skins. The wine was 24 months in Allier oak barriques and tonneaux of 225 litres, followed by six months in a bottle before release.

| Winery | Tauleto is a dialect term applied by local farmers to a plot with abundant water resources. The springs running under the Sangiovese in the Tauleto vineyard minimise water stress in the vines. The blend includes Uva Longanesi, an almost-forgotten native variety that has been rediscovered and revived. It produces wines with high tannins and a flavour profile of cherry and strawberry, with vanilla and liquorice overtones. The average age of the vines is 20 years, producing a yield of 6.5 tonnes per hectare. The soil is rich in clay, which offers good water retention properties to nourish the vine during the warm, dry summers. Tauleto is Umberto Cesari's flagship wine and is only produced in the finest vintages. |
