Villa Noria Levin 0% Blanc de Blancs NV

Levin 0% is the first range of organic alcohol-free wine produced by non-alcoholic fermentation with native yeast and lactic acid bacteria. Developed and bottled at the Villa Noria estate, Levin 0% is certified organic, vegan and completely natural (no sulfites, no preservatives, no added flavours and no dealcoholization that changes the balance of the wine). The Chardonnay grapes are harvested at night at the beginning of August to have grape juice with high acidity and low residual sugar. After destemming and crushing, we make 12 hours of skin contact at 3 °C to extract the aromas from the skin of the berries, and then a gentle pressing. The innovation of Levin 0% is to ferment the juice with homemade bacteria and yeast strains that produce no alcohol. This no-alcoholic fermentation transforms the sugar from the grape juice into lactic acid, glycerol, CO2 and aromas. After this nonalcoholic fermentation, we make a sterile filtration and pasteurization in a bottle to stabilize Levin 0%. We use no sulfites and other additives. 

Levin 0% Blanc de Blanc is a nonalcoholic sparkling wine with small bubbles and persistent foam. The nose offers aromas of white flowers such as acacia and hawthorn, hazelnut notes, toasted bread, and exotic fruits like mango. On the palate, it is refreshing with a nice acidity, with creamy and pleasant bubbles.
