- An intense red, the Chiave di Saletta’s nose shows powerful and penetrating notes of berries and dark chocolate. Balsamic notes and spicy sensations are credited to the oak barrels, while the palate is supple and boasts soft, velvety tannins. This is an elegant wine with an acceptable length and persistence and a finish and aftertaste that recalls mint, tobacco, and chocolate.
During fermentation in barrels and stainless steel tanks, meticulous attention is given to an extraction process focusing on fresh and fragrant aromas, good colour and supple, silky tannins. Once the grapes have been run off their skins at the end of fermentation, the wine is put through malolactic fermentation in oak barrels to bring out an expressive aroma fully. The ageing process lasts 14 months in wooden barriques, 40% new, 30% first, and 30% second. The various lots finish their ageing separately and are blended a few months before bottling.

Winery | The vineyards producing this wine are Torrino, Colline, Poggettino, Bosco, and Leccio, which are formed of calcareous clay and parcels of sandstone and tufa. The Sangiovese and Merlot are trained on single and bilateral spurred cordon, while the Cabernet Sauvignon and Cabernet Franc are guyot trained. Delicate work in the vineyard, such as leaf removal, crop thinning, and manual selection of bunches, ensures high-quality production and varietal typicity. |
