The vineyards are spread across the undulating hills les Collines of the Bordic region. The influence of the Cevennes to the north results in temperature differences between day and night from 14 to 18°, preserving the berries' natural acidity and translating the fruit into fresh wines. The vines are planted in deep, low-fertility soils, which encourage the vines to send their roots deeper into the soil in search of nutrients and water, resulting in greater complexity. The Viognier vines are planted in the south-to-south-easterly orientation, capturing the maximum sunlight hours needed to ripen the fruit. The grapes are picked when the seed is al dente devoid of bitterness, which requires knowledge and experience to harvest at the optimum moment. The harvest takes place at night to retain the freshness of the fruit.
