Blending these two grape varieties and crafting them together is more than just a question of analysis, figures and theories – it is about style and alchemy. The crop was destemmed and vinified with wild, indigenous yeasts, which retained the individual
characteristics of the Sauvignon Blanc and Viognier and the terroir in which they were grown. Vinified with minimal intervention and without filtration, the wine was bottled early to retain expressive fruit and vibrancy.
