The grapes come from the best plots among the Picpoul vineyards, located along the banks of the Étang de Thau in a Natura 2000 zone. The proximity of the sea significantly influences the climate and the soil. The climate is very hot and dry during the summer, which forces the vine’s roots deeper into the soil in search of minerals and water. However, the sea reduces the impact of the heat, and the breezes help limit drought conditions and hydric stress. The nearby Étang de Thau is the largest lagoon in the Languedoc region and is a heat regulator. The complex soils of the plateau consist of silts and clays, sands and sandstones, and pebbles and conglomerates. The vines are meticulously pruned to control the vine's vigour and yields. The vines are cultivated sustainably, and Ormarine has been certified by Terra Vitis since 2018. The use of sexual confusion is employed to limit predators, and the careful use of sustainable treatments preserves the vines, vineyard and also nearby oyster farms on the Étang de Thau. The grapes are carefully harvested at night.
