  • Rich bouquet with intense mineral notes. Full and round, yet firm and massive on the palate. FOOD/WINE PAIRING: Fish, shellfish and other seafood, grilled or in a cream sauce. • HARVEST: Manual
• VINIFICATION: Use the principle of gravity to avoid all pumping, which could harm the quality of the
wine. Brief (1½ - 2 hours) pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the
grape. Very light static settling of the juice to preserve enough fine leaves so that the alcoholic and malolactic
fermentations can occur naturally. The must is run into French oak barrels (aged 6 years on average) for 50 to
60% of the harvest. The remainder is vinified in small stainless steel vats.
• MATURING: 14 to 15 months, of which 5 to 6 months on fine lees in French oak barrels, for 50 to 60% of the
harvest. The end of maturation occurs in small stainless steel vats.

William Fèvre is one of Chablis’ greatest estates, created by William Fèvre between 1957 and his retirement in 1998 when he sold the domain to Champagne House. Joseph Henriot. Beginning with just 7 hectares and growing gradually to 48 hectares, planting in the best of the Premier and Grand Cru sites where the vineyards had fallen into disrepair. The talented Didier Séguier came in as Head Winemaker from Bouchard Pere et Fils in Beaune. The domain wines include 12 hectares of Premier Cru vineyards and 16 hectares of Grand Cru. The whole crop of their domaine wines, straight Chablis included, is harvested by hand, the grands crus in small ‘cassettes’, with a sorting table back at the winery to ensure the quality of the raw material. In 2023, the domain was purchased by Domaines Baron de Rothschild (Lafite), led by Saskia de Rothschild.
