- The wine offers a captivating blend of aromas, including the refreshing scents of bergamot, grapefruit, pear, delicate white florals, and subtle herbal notes. It delivers a burst of invigorating freshness on the palate, with lively acidity and a satisfying mineral finish. The wine was carefully crafted through a fermentation process utilising wild and cultivated yeasts in stainless steel tanks. This approach was chosen to maintain the wine's refreshing and pure fruit flavours. Following fermentation, the wine was aged for six months on the fine lees in stainless steel tanks before being racked, ultimately undergoing 12 months of maturation.

Winery | The organically cultivated vineyard is located on the eastern slopes of Mount Cholomon, facing Mount Athos and the Syggitikos Gulf. The vines are grown at 200 to 500 meters, just a short distance from the Aegean Sea. Ocean breezes and cool, humid winds from the surrounding mountains at night strongly influence the vines. This temperate climate allows for natural, bright acidity and contributes to the seasonal hydration of the vines, allowing the precious natural resources to be used more sparingly. In addition to moderate watering, the shallow, sandy loam soil and the slate subsoil ensure low yields and concentrated juice. In contrast, the soil's high copper content and limestone provide a foundation for satisfying minerality. The vines are cane pruned, single—and double-Guyot trained, and the grapes reach excellent maturity with balanced acidity and good phenolic density. The grapes are 100% hand-harvested. |
