Upon arrival at the winery, the grapes were carefully sorted. Fermentation took place in concrete eggs with wild yeasts at low temperatures to retain the freshness and aromatics of the cool-climate fruit. The wine was aged for eight months in concrete eggs.
Complex aromas of green apple, hay, and herbaceous notes are underpinned by remarkable minerality. The wine is textured and full-flavoured, with a wonderful fluency and rich energy on the finish.

| Winery | Each blend component comes from carefully selected, high-altitude, cool-climate sites which produce grapes with aromatic complexity and beautiful freshness. The Sauvignon Blanc vineyard is located in the premium viticultural region of Gualtallary, where the vines are planted in calcareous soils at 1,400 metres above sea level. The Semillon grapes come from a low-yielding 50-year-old vineyard in La Consulta, where the vines grow at 1,000 metres elevation in sandy soils and produce rich, concentrated wines. The Chardonnay component comes from La Carrera, located 1,700 metres above sea level in sandy soils supported by gravel and boulders. |
